  1. Preheat the oven to 350°F (175°C).
  2. Cook the pierogi according to the package instructions. Drain and set aside.
  3. In a skillet, melt 2 tablespoons of butter over medium heat. Add the chopped onion and cook until softened and lightly browned.
  4. In a large bowl, whisk together the sour cream, eggs, salt, and black pepper.
  5. Grease a casserole dish with the remaining butter. Layer half of the cooked pierogi in the dish, followed by half of the sautéed onions and half of the shredded cheese. Repeat the layers with the remaining pierogi, onions, and cheese.
  6. Pour the sour cream mixture over the pierogi layers.
  7. Bake in the preheated oven for 30-35 minutes, or until the casserole is set and the cheese is melted and golden.
  8. Remove from the oven and let it rest for 10 minutes. Sprinkle with chopped parsley before serving. Enjoy!
