Preheat the oven to 325°F (163°C). Mix graham cracker crumbs and melted butter, then press onto the bottom of a 9-inch springform pan.

In a large bowl, beat cream cheese, sugar, and vanilla extract until well blended. Add eggs, one at a time, beating on low speed after each addition. Stir in melted white chocolate and peppermint extract.

Pour the mixture over the crust. Bake for 55-60 minutes or until the center is set. Remove from the oven and let it cool in the pan for 10 minutes.

Run a knife around the rim of the pan to loosen the cheesecake. Cool completely, then refrigerate for at least 4 hours or overnight.

Before serving, remove the sides of the springform pan. Garnish with crushed candy canes and whipped cream.
