  1. Preheat the oven to 325°F (163°C).
  2. In a mixing bowl, combine the crust ingredients and press into the bottom of a 9-inch springform pan.
  3. In a separate mixing bowl, beat the cream cheese, sugar, and vanilla bean paste until smooth.
  4. In a small microwave-safe bowl, sprinkle gelatin over water and let it bloom for 5 minutes. Microwave for 10 seconds to dissolve the gelatin.
  5. Add the dissolved gelatin and vanilla extract to the cream cheese mixture and beat until well combined.
  6. In a separate mixing bowl, whip the heavy cream until stiff peaks form.
  7. Gently fold the whipped cream into the cream cheese mixture.
  8. Pour the mixture over the crust in the springform pan and smooth the top.
  9. Bake for 40-45 minutes or until the edges are set and the center is slightly jiggly.
  10. Turn off the oven and let the cheesecake rest inside for 1 hour.

  12. Refrigerate for at least 3 hours or overnight.
