In a large bowl, cream together the butter and granulated sugar until light and fluffy.

Beat in the egg and vanilla extract until well combined.

In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Divide the dough in half, wrap each half in plastic wrap, and refrigerate for at least 30 minutes.

Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.

Roll out the dough on a lightly floured surface to about 1/4-inch thickness.

Use cookie cutters to cut out desired shapes and transfer them to the prepared baking sheets.

Bake for 8-10 minutes, or until the edges are lightly golden.

Allow the cookies to cool on the baking sheets for 5 minutes, then transfer them to wire racks to cool completely.

In a medium bowl, beat the PHILADELPHIA Cream Cheese and powdered sugar until smooth.

If desired, divide the cream cheese mixture into separate bowls and add food coloring to each bowl.

Spread or pipe the cream cheese frosting onto the cooled cookies.
