  1. Preheat the grill to medium-high heat.
  2. Clean the portobello mushrooms and remove the stems.
  3. In a small bowl, mix together olive oil, balsamic vinegar, salt, and black pepper.
  4. Brush both sides of the mushrooms and garlic cloves with the olive oil mixture.
  5. Place the mushrooms and garlic on the grill and cook for about 4-5 minutes per side, or until tender.
  6. Remove the mushrooms and garlic from the grill and let them rest for 5 minutes.
  7. While the mushrooms are resting, toast the burger buns on the grill.
  8. Peel the roasted garlic cloves and mash them in a small bowl.
  9. Spread the mashed garlic on the bottom half of each bun.
  10. Place a grilled portobello mushroom on top of the garlic.
  11. Add a slice of gouda cheese on each mushroom.
  12. Top with lettuce, tomato, and red onion slices.
  13. Mix mayonnaise and Dijon mustard in a small bowl and spread on the top half of each bun.
  14. Place the top bun on the assembled burger.
