Instructions

  1. Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. In a bowl, combine the chocolate cookie crumbs and melted butter. Press the mixture into the bottom of the prepared pan to form the crust.
  3. In a large mixing bowl, beat the cream cheese, sugar, cocoa powder, and vanilla extract until smooth and creamy.
  4. Add the eggs, one at a time, beating well after each addition. Stir in the melted chocolate.
  5. Pour the batter over the crust in the pan. Smooth the top with a spatula.
  6. Bake for 45-50 minutes or until the center is set and the edges are slightly puffed.
  7. Remove from the oven and let the cheesecake cool in the pan for 10 minutes. Then, run a knife around the edges to loosen the cheesecake.
  8. Allow the cheesecake to cool completely on a wire rack. Once cooled, refrigerate for at least 2 hours or overnight.
  9. Before serving, garnish with whipped cream and chocolate shavings, if desired.
  10. Slice and serve chilled.
