  1. Preheat oven to 325°F (163°C). In a medium bowl, combine graham cracker crumbs and melted butter. Press mixture into the bottom of a 9-inch springform pan.
  2. In a large bowl, beat cream cheese, granulated sugar, pumpkin, pumpkin pie spice, and vanilla extract until smooth. Add eggs, one at a time, beating well after each addition. Pour mixture into prepared crust.
  3. Bake for 45-50 minutes or until center is set. Remove from oven and let cool in pan for 15 minutes. Run a knife around the edges of the pan to loosen the cheesecake, then remove the sides of the pan. Let cool completely on a wire rack.
  4. Refrigerate for at least 4 hours or overnight. Just before serving, top with whipped cream and sprinkle with ground cinnamon.
