Ratatouille is a traditional French Provençal stewed vegetable dish, originating in Nice. It was popularized by the animated film ‘Ratatouille’ released by Disney in 2007.

  1. Preheat the oven to 375°F (190°C).
  2. Slice the eggplant, zucchini, yellow squash, and bell peppers into thin rounds.
  3. Heat olive oil in a large skillet over medium heat. Saute the onion and garlic until softened.
  4. Add the tomato sauce, salt, and black pepper to the skillet. Cook for 5 minutes.
  5. Spread a thin layer of the tomato sauce mixture on the bottom of a baking dish.
  6. Arrange the sliced vegetables in an alternating pattern on top of the sauce.
  7. Drizzle olive oil over the vegetables and season with salt and black pepper.
  8. Cover the baking dish with aluminum foil and bake for 45 minutes.
  9. Remove the foil and bake for an additional 15 minutes, or until the vegetables are tender.
  10. Let the ratatouille rest for 10 minutes before serving. Garnish with fresh basil.
