Preheat oven to 325°F (163°C). In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture onto bottom of a 9-inch (23 cm) springform pan.

In a small bowl, dissolve instant coffee granules in boiling water. Set aside.

In a large bowl, beat cream cheese, sugar, and vanilla extract until well blended. Add eggs, one at a time, beating on low speed after each addition. Stir in coffee mixture. Pour over crust.

Bake for 35 minutes or until center is set. Cool completely. Refrigerate for at least 2 hours.

Spread whipped topping over cheesecake. Sprinkle with cocoa powder. Serve chilled.
