Mocha cakes are believed to have originated in Vienna, Austria, and are named after the city’s famous coffee drink, the ‘Mocha’.

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a mixing bowl, whisk together the flour, cocoa powder, instant coffee powder, baking powder, and salt.
  3. In a separate bowl, cream together the butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, followed by the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let the cakes cool in the tin for 10 minutes.
  9. Transfer the cakes to a wire rack and let them cool completely.
  10. In a small bowl, dissolve the instant coffee powder in hot water.
  11. Brush the coffee mixture over the tops of the cakes.
  12. Top each cake with whipped cream and sprinkle with chocolate shavings.
  13. Serve and enjoy!
