Preheat the oven to 350°F (175°C) and grease a baking dish.

In a saucepan, melt the butter. Stir in sugar until well combined. Remove from heat and let it cool slightly.

In a separate bowl, beat eggs and vanilla extract. Add the butter-sugar mixture and mix well.

Gradually add flour, cocoa powder, peppermint extract, and salt to the mixture. Mix until just combined.

Fold in the chocolate chips.

Pour half of the batter into the prepared baking dish. Place peppermint patties evenly over the batter. Top with the remaining batter.

Bake for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
