Peppermint Cream-Puff Ring with Chocolate Glaze

Preheat the oven to 400°F (200°C). In a medium saucepan, combine the butter, water, and salt. Bring to a boil over medium heat. Remove from heat and add the flour all at once. Stir until the mixture forms a ball.

Transfer the dough to a mixing bowl and let it cool for 5 minutes. Add the eggs, one at a time, beating well after each addition. Stir in the peppermint extract.

Spoon the dough into a large pastry bag fitted with a large star tip. Pipe the dough in a ring shape onto a greased baking sheet. Bake for 25 minutes or until golden brown. Remove from the oven and let it cool completely.

In a mixing bowl, beat the heavy cream and powdered sugar until stiff peaks form. Cut the cooled puff ring in half horizontally. Fill the bottom half with the whipped cream mixture.

In a small saucepan, melt the chocolate and vegetable oil over low heat, stirring until smooth. Drizzle the chocolate glaze over the top of the cream-filled puff ring.

Place the top half of the puff ring on top of the cream and chocolate glaze. Let it rest for 30 minutes before serving.
