  1. Preheat the oven to 220°C (200°C fan).
  2. In a large mixing bowl, combine the self-raising flour and butter. Rub the butter into the flour until it resembles breadcrumbs.
  3. Stir in the grated mature cheddar cheese, finely chopped Fenland celery, and chopped walnuts.
  4. In a separate jug, whisk together the milk and egg.
  5. Make a well in the center of the dry ingredients and pour in the milk mixture. Stir until a soft dough forms.
  6. Turn the dough out onto a floured surface and gently knead it a few times until it comes together.
  7. Roll out the dough to a thickness of about 2cm.
  8. Use a round cutter to cut out scones and place them onto a baking tray lined with parchment paper.
  9. Brush the tops of the scones with a little milk.
  10. Bake in the preheated oven for 12-15 minutes until golden brown.
  11. Remove from the oven and allow the scones to cool on a wire rack for 10 minutes before serving.
