Preheat the oven to 220°C (200°C fan).

In a large mixing bowl, combine the self-raising flour and butter. Rub the butter into the flour until it resembles breadcrumbs.

Stir in the grated mature cheddar cheese, finely chopped Fenland celery, and chopped walnuts.

In a separate jug, whisk together the milk and egg.

Make a well in the center of the dry ingredients and pour in the milk mixture. Stir until a soft dough forms.

Turn the dough out onto a floured surface and gently knead it a few times until it comes together.

Roll out the dough to a thickness of about 2cm.

Use a round cutter to cut out scones and place them onto a baking tray lined with parchment paper.

Brush the tops of the scones with a little milk.

Bake in the preheated oven for 12-15 minutes until golden brown.

Remove from the oven and allow the scones to cool on a wire rack for 10 minutes before serving.
