Frosted Pink Lemonade Cupcakes
Pink lemonade is traditionally made by adding red food coloring or cranberry juice to regular lemonade.

Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.

In a large bowl, combine the flour, sugar, baking powder, and salt.

Add the softened butter and mix until the mixture resembles coarse crumbs.

In a separate bowl, whisk together the egg, milk, lemon juice, lemon zest, and pink food coloring.

Pour the wet ingredients into the dry ingredients and mix until just combined.

Divide the batter evenly among the cupcake liners.

Bake for 15-18 minutes or until a toothpick inserted into the center comes out clean.

Remove from the oven and let cool completely.

In a medium bowl, beat together the powdered sugar, softened butter, vanilla extract, and milk until smooth and creamy.

Frost the cooled cupcakes with the frosting and sprinkle with pink sanding sugar.
