  1. Preheat the oven to 350°F (175°C). Grease and flour a jelly roll pan.
  2. In a medium bowl, mix together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the sugar and butter until light and fluffy. Beat in the egg. Stir in the milk, vanilla extract, peppermint extract, and red food coloring. Gradually mix in the dry ingredients until just blended.
  4. Pour the batter into the prepared pan, spreading evenly. Bake for 12 to 15 minutes, or until a toothpick inserted into the center comes out clean.
  5. While the cake is still warm, sprinkle powdered sugar onto a clean kitchen towel. Turn the cake out onto the towel and roll up the cake, starting at one of the short ends. Let the cake cool completely in the rolled position.
  6. In a medium bowl, beat together the cream cheese and powdered sugar until smooth. Gradually beat in the heavy cream until the mixture thickens.
  7. Unroll the cake and spread the cream cheese mixture evenly over the surface. Sprinkle with crushed candy canes. Roll the cake back up, removing the towel as you go.
  8. Place the rolled cake on a serving platter and refrigerate for at least 1 hour before serving.
  9. Slice and serve chilled. Enjoy!
