Pecan Caramel Cheesecake

Preheat the oven to 325°F (163°C).

In a medium bowl, mix together graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan.

In a large bowl, beat cream cheese, sugar, and vanilla extract until smooth. Add eggs one at a time, beating well after each addition.

Pour the cream cheese mixture over the crust in the springform pan.

Drizzle caramel sauce over the top of the cream cheese mixture and swirl with a knife.

Sprinkle chopped pecans on top.

Bake for 55-60 minutes or until the center is set.

Remove from the oven and let it cool in the pan for 10 minutes. Then, run a knife around the edges to loosen the cheesecake from the pan. Remove the sides of the springform pan.

Let the cheesecake cool completely, then refrigerate for at least 2 hours or overnight.

Serve chilled with whipped cream on top.
