  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a separate large bowl, cream together the softened butter, granulated sugar, brown sugar, and peanut butter until smooth.
  4. Beat in the egg and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Roll the dough into 12 equal-sized balls and place them onto a parchment-lined baking sheet.
  7. Flatten each ball with a fork, making a crisscross pattern.
  8. Bake for 10 minutes or until golden brown.
  9. Allow the cookies to cool completely.
  10. Once the cookies are cooled, scoop 2 tablespoons of vanilla ice cream onto the bottom side of one cookie and spread it evenly.
  11. Sprinkle a tablespoon of Peanut Butter M&Ms on top of the ice cream.
  12. Place another cookie on top, bottom side down, and gently press to create a sandwich.
  13. Repeat with the remaining cookies and ice cream.
