Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.

In a medium bowl, whisk together the flour, baking soda, and salt.

In a large bowl, beat together the butter, peanut butter, granulated sugar, and brown sugar until creamy. Beat in the egg and vanilla extract.

Gradually add the flour mixture to the butter mixture and stir until combined. Fold in the chocolate chunks and chopped peanuts.

Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them 2 inches apart. Press each cookie with a fork to create a crisscross pattern.

Bake for 10-12 minutes or until lightly golden brown. Allow the cookies to cool on the baking sheets for 5 minutes, then transfer to wire racks to cool completely.
