Preheat the oven to 350°F (175°C). In a mixing bowl, cream together the peanut butter, unsalted butter, granulated sugar, and brown sugar. Add the egg and vanilla extract, and mix well.

In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until well combined.

Fold in the dried apricots and roasted peanuts.

Drop spoonfuls of the cookie dough onto a greased or lined baking sheet.
