Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

Roll out the puff pastry sheet on a lightly floured surface and cut into 6 rectangles.

Place the pastry rectangles on the prepared baking sheet and bake for 20-25 minutes, or until golden brown.

While the pastry is baking, prepare the cream filling. In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

Once the pastry has cooled, slice each rectangle in half horizontally.

Spread a layer of the cream filling on the bottom half of each pastry slice.

Arrange the sliced peaches on top of the cream filling.

Place the top half of the pastry slice on the peaches to form a sandwich.

In a small saucepan, combine the granulated sugar, water, and salt. Cook over medium heat until the sugar has dissolved.

Remove the saucepan from the heat and stir in the bourbon.

Drizzle the bourbon caramel sauce over the assembled eclairs.

Allow the eclairs to rest for 1 hour before serving. Enjoy!
