Peach Upside Down Muffins
Upside down cakes have been around for centuries and were traditionally made with apples or pineapple. The concept of making an upside down dessert in muffin form adds a fun twist to a classic recipe.

Preheat the oven to 375°F (190°C).

In a mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt.

Melt the unsalted butter and add it to the dry ingredients, along with the milk, egg, and vanilla extract. Mix until well combined.

Place a spoonful of brown sugar in the bottom of each muffin cup.

Arrange a few slices of canned peaches on top of the brown sugar in each muffin cup.

Spoon the batter over the peaches, filling each muffin cup about 2/3 full.

Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Remove from the oven and let the muffins cool in the pan for 10 minutes.

Carefully invert the muffins onto a wire rack to cool completely.
