Preheat the oven to 400°F (200°C).

Cut the puff pastry sheets into 12 equal squares.

Press each square into a muffin tin cup, forming a pastry cup.

Slice the peaches into thin wedges.

Place a spoonful of hot pepper jelly into each pastry cup.

Top with a few peach slices.

Cut the brie cheese into small pieces and place on top of the peaches.

In a small bowl, whisk together the egg and water to make an egg wash.

Brush the edges of the puff pastry cups with the egg wash.

Bake in the preheated oven for 15-20 minutes, or until the pastry is golden brown and the cheese is melted.
