Preheat the oven to 350°F (175°C). Grease a 9x9-inch baking dish.

In a medium bowl, combine the flour and 1/4 cup of sugar. Cut in the butter until the mixture resembles coarse crumbs.

Press the mixture into the bottom of the prepared baking dish.

Bake in the preheated oven for 15 minutes.

In a separate bowl, whisk together the egg yolks, remaining sugar, and vanilla extract until well combined.

In a saucepan, combine the peaches, cornstarch, cinnamon, and salt. Cook over medium heat, stirring constantly, until the mixture thickens.

Remove the peach mixture from the heat and gradually whisk in the egg yolk mixture.

Pour the peach custard mixture over the baked crust.

Return the baking dish to the oven and bake for an additional 20 minutes, or until the custard is set.

Remove from the oven and let cool for 30 minutes before cutting into squares.
