  1. Preheat the oven to 180°C (350°F/Gas 4). Roll out the shortcrust pastry and use it to line a 23cm (9in) tart tin. Prick the pastry with a fork, then line with baking parchment and fill with baking beans. Blind bake for 15 minutes.
  2. Slice the courgettes and tomatoes into thin rounds. Heat the olive oil in a frying pan over medium heat and add the garlic. Cook for 1 minute, then add the courgettes and cook for 5 minutes until softened. Remove from the heat and stir in the basil leaves.
  3. In a separate bowl, whisk together the eggs and double cream. Season with salt and black pepper.
  4. Remove the baking beans and parchment from the tart case. Arrange the courgette and tomato slices on the base, then pour over the egg mixture. Sprinkle with grated Parmesan cheese.
  5. Bake in the oven for 20 minutes until the filling is set and golden. Allow the tart to cool for 10 minutes before serving.
  6. For the roasted tomato coulis, place the cherry tomatoes on a baking tray, drizzle with olive oil, and season with salt and black pepper. Roast in the oven at 200°C (400°F/Gas 6) for 15-20 minutes until softened. Blend the roasted tomatoes until smooth.
  7. Serve the courgette tart with the roasted tomato coulis on the side.
