Parsnip & Caramelized Onion Gratin
Parsnips are a root vegetable closely related to carrots and parsley. They have a sweet and nutty flavor when cooked.

Preheat the oven to 180°C (350°F).

Peel and thinly slice the parsnips and onions.

In a large skillet, melt the butter over medium heat. Add the onions and cook until caramelized, about 15 minutes.

In a separate saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute. Gradually whisk in the milk and cook until thickened, about 5 minutes.

Remove the saucepan from the heat and stir in the grated Gruyere cheese, thyme, salt, and black pepper.

In a greased baking dish, layer the parsnips and caramelized onions. Pour the cheese sauce over the top.

Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
