  2. In a large bowl, whisk together the almond flour, coconut flour, baking soda, and salt.
  3. In a separate bowl, beat the eggs. Add honey, coconut oil, lemon juice, and lemon zest. Mix well.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Gently fold in the blueberries.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
