Ozark Mushroom Soup

Heat butter in a large pot over medium heat. Add chopped onion and minced garlic, sauté until fragrant and translucent.

Add all three types of mushrooms (oyster, button, and shiitake) to the pot. Cook for 5 minutes, stirring occasionally.

Pour in the vegetable stock and add thyme and bay leaves. Bring to a boil, then reduce heat and let it simmer for 20 minutes.

Remove the bay leaves and use an immersion blender to puree the soup until smooth.

Stir in the heavy cream and season with salt and black pepper. Simmer for an additional 5 minutes.

Remove from heat and let the soup rest for 5 minutes before serving.
