Place the potatoes in a large pot and cover with water. Bring to a boil and cook until fork-tender, about 15-20 minutes.

Drain the potatoes and let them cool slightly.

Cut the potatoes in half lengthwise and scoop out the flesh, leaving a thin shell.

In a bowl, mix the potato flesh, mayonnaise, Dijon mustard, paprika, salt, and black pepper until well combined.

Fill the potato shells with the mixture and place them on a baking sheet.

Bake for 20-25 minutes, or until the tops are golden brown.
