  4. Cut the potatoes in half lengthwise and scoop out the flesh, leaving a thin shell.
  5. In a bowl, mix the potato flesh, mayonnaise, Dijon mustard, paprika, salt, and black pepper until well combined.
  6. Fill the potato shells with the mixture and place them on a baking sheet.
  7. Bake for 20-25 minutes, or until the tops are golden brown.
  8. Remove from the oven and let them rest for 5 minutes.
  9. Garnish with sliced green onions and crumbled bacon. Serve hot.
