Orange-Currant Scones
Scones originated in Scotland and are traditionally served with clotted cream and jam.

Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

Cut the butter into small pieces and add it to the flour mixture. Use your fingers or a pastry cutter to cut the butter into the flour until the mixture resembles coarse crumbs.

Stir in the orange zest, orange juice, egg, dried currants, and milk. Mix until just combined.

Turn the dough out onto a lightly floured surface and knead it gently a few times until it comes together.

Pat the dough into a circle about 1 inch (5 cm) thick. Use a sharp knife to cut the circle into 8 wedges.

Place the scones on the prepared baking sheet and bake for 12-15 minutes, or until golden brown.

Remove from the oven and let the scones cool on a wire rack for 10 minutes before serving.
