Onion Confit, Walnut and Gorgonzola Pizza
Gorgonzola is one of the oldest known blue-veined cheeses, originating in the Italian town of Gorgonzola in the 9th century.

Preheat the oven to 425°F (220°C).

Roll out the pizza dough on a floured surface to your desired thickness.

In a large skillet, heat the olive oil over medium heat. Add the onions and cook until caramelized, about 15 minutes.

Stir in the balsamic vinegar, honey, thyme, salt, and black pepper. Cook for an additional 5 minutes.

Spread the onion confit evenly over the pizza dough.

Sprinkle the walnuts and gorgonzola cheese on top.
