Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a large bowl, combine oats, flaxseed meal, almond butter, maple syrup, coconut oil, vanilla extract, baking powder, and salt. Mix until well combined.

Fold in the dark chocolate chunks.

Scoop about 2 tablespoons of dough and shape into a cookie. Place it on the prepared baking sheet.

Repeat with the remaining dough, spacing the cookies about 2 inches apart.

Bake for 12-15 minutes, or until the edges are golden brown.

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.
