  2. Peel and slice the potatoes into thin rounds.
  3. Blanch the spinach in boiling water for 1 minute, then drain and squeeze out excess water.
  4. In a pan, melt the butter and sauté the onion and garlic until softened.
  5. In a greased baking dish, layer half of the potatoes, followed by half of the spinach, onion, and garlic mixture.
  6. Sprinkle half of the cheddar cheese on top.
  7. Repeat the layers with the remaining ingredients.
  8. In a separate bowl, whisk together the milk, salt, and black pepper.
  9. Pour the milk mixture over the layered ingredients in the baking dish.
  10. Cover the dish with foil and bake for 30 minutes.
  11. Remove the foil and bake for an additional 10 minutes, or until the top is golden and the potatoes are tender.
  12. Let the dish rest for 5 minutes before serving.
