Heat butter in a large skillet over medium heat. Add onions and garlic, and sauté until onions are translucent.

Slowly pour in vegetable broth, stirring constantly until the mixture thickens.

Reduce heat to low and stir in sour cream, Dijon mustard, paprika, salt, and black pepper. Simmer for 5 minutes.

Meanwhile, cook the egg noodles according to package instructions.
