Preheat the oven to 375°F (190°C).

Roll out the pie crust and press it into a tart pan.

In a skillet, sauté the mushrooms and shallots until softened.

In a bowl, whisk together the eggs, milk, thyme, salt, and black pepper.

Spread the mushroom and shallot mixture onto the pie crust.

Pour the egg mixture over the mushrooms and shallots.

Sprinkle grated Gruyere cheese on top.

Bake in the preheated oven for 30 minutes or until the tart is golden brown.
