Orzo is a type of pasta that is shaped like rice grains, hence its name which means ‘barley’ in Italian.

Cook the orzo according to package instructions. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add onions and garlic, sauté until fragrant.

Add mushrooms and cook until they release their moisture and start to brown.

Add cooked orzo to the skillet and stir to combine.

Pour in vegetable broth and bring to a simmer. Cook for 5 minutes, until the liquid is absorbed.

Remove from heat and stir in Parmesan cheese, parsley, salt, and black pepper.
