Mushroom, Apple, and Walnut Stuffed Acorn Squash
Acorn squash belongs to the same family as butternut squash and pumpkin. It is rich in vitamins A, C, and B-6, as well as dietary fiber.
This is vegetarian, gluten free and high protein recipe. Dish can be prepared in 75 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 13.

Preheat the oven to 375°F (190°C).

Cut the acorn squash in half and scoop out the seeds.

Place the squash halves on a baking sheet, cut side up, and brush with olive oil.

Season with salt and pepper.

Bake for 40-45 minutes, or until the squash is tender.

While the squash is baking, prepare the stuffing.

Heat olive oil in a large skillet over medium heat.

Add onion, celery, and garlic and cook until softened.

Add mushrooms and cook until they release their moisture.

Add diced apple, walnuts, thyme, salt, and pepper.

Cook for an additional 5 minutes.

Remove the squash from the oven and let it cool slightly.

Fill each squash half with the mushroom, apple, and walnut stuffing.

Sprinkle with Parmesan cheese and breadcrumbs.

Place back in the oven and bake for another 10-15 minutes, until the cheese is melted and breadcrumbs are golden brown.

Let the stuffed squash rest for 5 minutes before serving.
