Mummy’s Tea Bread
Tea bread is a traditional British fruit bread that is often enjoyed with a cup of tea. It is called ‘Mummy’s Tea Bread’ because it is a recipe passed down through generations.

Preheat the oven to 180°C (350°F). Grease and line a loaf tin.

In a small saucepan, bring 300ml (10 fl oz) of water to the boil. Remove from heat and add the tea bags. Allow to steep for 5 minutes, then remove the tea bags and discard.

In a large mixing bowl, combine the flour, baking powder, and mixed spice. Rub in the butter until the mixture resembles breadcrumbs.

Stir in the golden syrup, eggs, milk, mixed dried fruit, and brown sugar. Gradually add the cooled tea, mixing well until combined.

Pour the batter into the prepared loaf tin and smooth the top. Bake in the preheated oven for 1 hour or until a skewer inserted into the center comes out clean.

Remove from the oven and let it rest in the tin for 10 minutes. Then transfer to a wire rack to cool completely.

Once cooled, slice and serve.
