This soup is inspired by the warm welcome Mrs. Claus gives to Santa Claus when he returns home from his Christmas Eve journey.

  1. Melt the butter in a large pot over medium heat. Add the onion, carrots, celery, and garlic. Cook until the vegetables are softened, about 5 minutes.
  2. Add the potatoes, vegetable broth, bay leaves, thyme, salt, and black pepper. Bring to a boil, then reduce the heat and simmer for 30 minutes, or until the potatoes are tender.
  3. Remove the bay leaves from the pot. Use an immersion blender to puree the soup until smooth.
  4. Stir in the heavy cream and cook for an additional 5 minutes.
  5. Serve hot, garnished with parsley.
