Moroccan Tagine with Olives and Artichoke Hearts
Tagine is a traditional Moroccan dish named after the clay pot in which it is cooked. The conical shape of the pot helps to retain moisture and flavors, resulting in tender and flavorful dishes.

Heat olive oil in a tagine or large pot over medium heat. Add the chicken thighs and cook until browned on all sides. Remove the chicken and set aside.

In the same pot, add the onion and garlic. Cook until softened.

Add the ground cumin, coriander, cinnamon, ginger, paprika, cayenne pepper, salt, and black pepper. Stir well.

Return the chicken to the pot and add the diced tomatoes and chicken broth. Bring to a simmer.

Reduce the heat to low, cover, and let the tagine simmer for 45 minutes.

Add the green olives, artichoke hearts, cilantro, and lemon juice. Cook for an additional 10 minutes.

Serve the Moroccan tagine with olives and artichoke hearts hot with couscous or bread.
