  1. Preheat the oven to 350°F (175°C) and grease a mini cake pan.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. In a separate bowl, whisk together the gluten-free flour blend, baking powder, ground cinnamon, and salt.
  4. In another bowl, mix the melted butter and brown sugar until well combined.
  5. Add the egg, vanilla extract, and mashed bananas to the butter-sugar mixture and mix well.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the brewed coffee. Mix until just combined.
  7. Fold in the chopped walnuts.
  8. Pour the batter into the prepared mini cake pan, filling each cavity about 2/3 full.
  9. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  10. Remove from the oven and let the mini cakes cool in the pan for 10 minutes.
  11. Transfer the cakes to a wire rack to cool completely.
