  1. In a large bowl, mix the flour and sugar. Cut in the chilled butter until the mixture resembles coarse crumbs.
  2. Add the egg and vanilla extract. Mix until the dough comes together.
  3. Divide the dough into two equal parts. Wrap each portion in plastic wrap and refrigerate for 30 minutes.
  4. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  5. Roll out one portion of the dough on a lightly floured surface to about 1/8-inch thickness.
  6. Use a round cookie cutter or glass to cut out circles from the dough.
  7. Place a teaspoon of fruit preserves in the center of each circle.
  8. Fold the sides of the circle up to form a triangle, pinching the corners to secure the filling.
  9. Repeat with the remaining dough and filling.
  10. Place the filled pastries on the prepared baking sheet and bake for 12-15 minutes, or until golden brown.
