  1. Rinse the quinoa under cold water.
  2. In a medium saucepan, bring the vegetable broth to a boil. Add the rinsed quinoa and reduce heat to low. Cover and simmer for 15 minutes or until the quinoa is cooked and the liquid is absorbed.
  3. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté until softened.
  4. Add the ground cumin, ground coriander, ground cinnamon, and turmeric powder to the skillet. Stir well to coat the onion and garlic with the spices.
  5. Add the carrot, red bell pepper, and zucchini to the skillet. Sauté for 5 minutes or until the vegetables are tender.
  6. Stir in the cooked quinoa, raisins, and chickpeas. Cook for an additional 2 minutes to heat through.
  7. Season with salt and black pepper to taste.
