  1. Preheat the oven to 350°F (175°C). Grease a muffin tin or line with paper liners.
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, and salt.
  3. In a separate bowl, mix together the brown sugar, vegetable oil, eggs, and vanilla extract until well combined.
  4. Add the grated carrots, grated apple, crushed pineapple, raisins, walnuts, and shredded coconut to the wet ingredients. Stir until evenly distributed.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  8. Allow the muffins to cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
  9. Serve and enjoy!
