  1. Preheat the oven to 350°F (175°C). In a mixing bowl, cream together the butter and sugar until light and fluffy. Add the egg and vanilla extract, and mix well.
  2. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.
  3. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper. Flatten each dough ball slightly with the back of a spoon.
  4. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. Remove from the oven and let cool completely.
  5. In a small bowl, combine the marshmallow creme, powdered sugar, cocoa powder, milk, vanilla extract, and butter. Mix until smooth and well combined.
  6. Spread a spoonful of the marshmallow filling onto the bottom of one cookie, then top with another cookie to form a sandwich. Repeat with the remaining cookies and filling.
  7. Allow the moon pies to rest for at least 1 hour before serving. Enjoy!
