Preheat the oven to 350°F (175°C). In a mixing bowl, cream together the butter and sugar until light and fluffy. Add the egg and vanilla extract, and mix well.
-
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.
-
Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper. Flatten each dough ball slightly with the back of a spoon.
-
Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. Remove from the oven and let cool completely.
-
In a small bowl, combine the marshmallow creme, powdered sugar, cocoa powder, milk, vanilla extract, and butter. Mix until smooth and well combined.
-
Spread a spoonful of the marshmallow filling onto the bottom of one cookie, then top with another cookie to form a sandwich. Repeat with the remaining cookies and filling.
-
Allow the moon pies to rest for at least 1 hour before serving. Enjoy!
