Monte Carlos are a popular Australian biscuit (cookie) that feature a sweet raspberry jam filling sandwiched between two coconut-flavored cookies.

Preheat the oven to 180°C (350°F).

In a mixing bowl, cream together the butter and sugar until light and fluffy.

Add the egg and vanilla extract, and mix well.

Gradually add the self-rising flour and desiccated coconut, and mix until well combined.

Roll the dough into small balls and place them on a baking tray lined with parchment paper.

Use your thumb or the back of a spoon to make an indentation in the center of each cookie.

Fill each indentation with raspberry jam.

Bake in the preheated oven for 12 minutes, or until golden brown.

Remove from the oven and let the cookies cool on the baking tray for 5 minutes.

Transfer to a wire rack to cool completely.
