Peel and chop the potatoes and carrots into small cubes.

Cut the broccoli and cauliflower into florets.

Heat olive oil in a large pan over medium heat.

Add the onion and garlic, and sauté until fragrant.

Add the potatoes, carrots, broccoli, and cauliflower to the pan. Season with salt and black pepper.
