  1. Crush the digestive biscuits and mix them with melted butter. Press the mixture into the bottom of a springform pan.
  2. In a mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs one at a time, mixing well after each addition.
  3. Pour the cream cheese mixture over the biscuit base in the springform pan.
  4. Bake in a preheated oven at 180°C for 45-50 minutes or until the cheesecake is set.
  5. Remove the cheesecake from the oven and let it cool to room temperature.
  6. In a separate bowl, dissolve the gelatin in water. Let it cool slightly.
  7. Arrange the mixed fresh fruits on top of the cooled cheesecake.
  8. Pour the gelatin mixture over the fruits.
  9. Refrigerate the cheesecake for at least 2 hours or until the gelatin is set.
  10. Serve chilled and enjoy!
