Preheat the oven to 350°F (175°C). In a large bowl, cream together the butter and sugar until smooth. Beat in the egg, then stir in the molasses.

In a separate bowl, combine the flour, baking soda, cinnamon, ginger, and salt. Gradually add the dry ingredients to the wet ingredients, mixing well after each addition.

Roll the dough into 1-inch balls and place them 2 inches apart on a baking sheet. Flatten each ball slightly with the bottom of a glass.

Bake for 10-12 minutes or until the edges are set. Remove from the oven and immediately press a few Gingerbread M&Ms into the center of each cookie.

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
