Preheat the oven to 350°F (175°C). Grease a muffin tin or line with paper liners.

In a large bowl, combine the grated carrots, chopped apples, and raisins.

In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.

In another bowl, beat the eggs. Add the honey, vegetable oil, vanilla extract, and Greek yogurt. Mix well.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Divide the batter evenly among the muffin cups.

Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
