Mixed Nut Shortbread

Shortbread is believed to have originated in Scotland in the 12th century and was traditionally made with just three ingredients: butter, sugar, and flour.

Preheat the oven to 350°F (175°C).

In a food processor, pulse the mixed nuts until coarsely chopped.

In a large bowl, cream together the butter and sugar until light and fluffy.

Add the vanilla extract and salt, and mix well.

Gradually add the flour and chopped nuts to the butter mixture, and mix until the dough comes together.

Press the dough into a greased 9-inch square baking dish.

Bake for 25 minutes, or until the edges are golden brown.

Remove from the oven and let cool in the baking dish for 30 minutes.

Cut into squares and serve.
